Quick, low-calorie, and flavorful lemon chicken piccata bowl.
Ingredients:
  • 40.00 ml plain flour
  • 500g chicken tenderloins
  • 270g pkt soba noodles
  • 18.20 gm extra virgin olive oil
  • 20.00 ml drained capers in vinegar, drained on paper towel
  • 2 garlic cloves, chopped
  • 3 green shallots, sliced
  • 80ml (1/3 cup) white wine
  • 250ml (1 cup) chicken stock
  • 82.50 ml finely chopped fresh continental parsley
  • 1 lemon, rind finely grated
  • Steamed broccolini, to serve
  • Lemon wedges, to serve (optional)
Instructions:
  • 1. Spread out the flour on a plate and season it. Toss in the chicken, ensuring it's evenly coated while shaking off any excess.
  • Prepare the soba noodles according to the package directions until they are tender. Then, set them aside and keep them warm.
  • In a large non-stick pan over high heat, sizzle the capers in 2 teaspoons of oil for 5 minutes until they pop and turn crispy. Transfer to a plate using a slotted spoon.
  • In the same pan, warm up the 2 teaspoons of remaining oil. Cook the chicken for 3 minutes on each side until it turns golden and is fully cooked. Transfer to a plate using tongs and let it cool slightly.
  • Sauté garlic and half of the shallots until fragrant. Pour in the wine and simmer until reduced, then add the stock and simmer until slightly thickened. Add chicken, half of the capers, parsley, and lemon zest. Season to taste.
  • Distribute noodles evenly into bowls. Arrange chicken and broccolini on top. Garnish with the remaining shallots and capers. Serve with lemon wedges.
