Whip up citrus-spiced salmon in 20 minutes for a quick and flavorful meal.
Ingredients:
  • 131.25 gm orange juice
  • 42.00 gm lemon juice
  • 42.00 gm lime juice, plus lime zest to serve
  • 89.38 gm honey
  • 2cm piece fresh ginger, finely grated
  • 1 garlic clove, crushed
  • 18.40 gm vegetable oil
  • 4 x 200g boneless salmon fillets, with skin
  • 2 oranges, peeled, thickly sliced
  • Steamed jasmine rice, to serve
  • Steamed Asian greens, to serve
  • Coriander leaves, to serve
  • Sliced red chilli, to serve
Instructions:
  • In a jug, mix together freshly squeezed orange, lemon, and lime juices with honey, ginger, and garlic. Season with a pinch of salt and black pepper to taste.
  • In a large frying pan over medium-high heat, heat oil. Brown salmon, skin-side down, for 3 minutes. Flip and brown for another 3 minutes. Pour juice mixture into the pan and simmer until glaze thickens slightly, about 3 minutes.
  • Place the salmon on a plate and cover to keep warm. Then, add orange slices to the pan and cook for about 1 minute, or until the oranges just soften.
  • Plate the salmon on a bed of fluffy rice alongside vibrant Asian greens, fragrant lime zest, juicy orange slices, and spicy chili. Finish it off by drizzling with a glossy glaze for an unforgettable presentation.
