Upgrade your mac and cheese with savory ham for a speedy and indulgent meal in under 30 minutes.
Ingredients:
  • 1/2 pound cheddar cheese, grated (about 2 cups, packed)
  • 1 teaspoon cornstarch
  • 2 quarts water
  • 2 cups uncooked elbow macaroni
  • 2 tablespoons unsalted butter
  • 2 tablespoons flour
  • 1 1/4 cup milk, heated until steamy, but not simmering
  • 1/2 teaspoon lemon juice
  • 1/4 cup ham, chopped into 1/4 inch cubes
  • Freshly grated black pepper
Instructions:
  • Combine cornstarch and grated cheese in a bowl, ensuring the cheese is evenly coated. Let it sit to prevent the cheese from becoming stringy.
  • Prepare the macaroni pasta: Heat 2 quarts of salted water to a rolling boil. Add 2 cups of elbow macaroni and cook slightly less than the recommended time on the package. (Check at 7 minutes if no package instructions.) Cook until al dente, then drain.
  • While the macaroni cooks, make the sauce: Melt 2 Tbsp butter in a large saucepan over medium heat. Whisk in 2 Tbsp flour and cook for about a minute. Gradually pour in 1 1/4 cups milk while whisking until smooth. Add the grated cheese, whisking until melted. Finish by stirring in the lemon juice. Keep the sauce warm over low heat if the macaroni isn't done yet.
  • Combine the cooked macaroni and ham with the cheese sauce, gently stirring. Avoid over-mixing. Finish with a sprinkle of freshly grated black pepper and serve promptly.
