Decadent buttermilk custard with plump raisins, crowned with fluffy meringue.
Ingredients:
  • 4 egg yolks
  • 1 cup white sugar
  • 1 tablespoon all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground allspice
  • 1 tablespoon melted butter
  • 1 cup raisins
  • 1 (9 inch) unbaked pie crust
  • 2 egg whites
Instructions:
  • Preheat your oven to 375°F (190°C).
  • In a spacious bowl, whip egg yolks and sugar until creamy; mix in flour, cinnamon, allspice, and salt. Add buttermilk and melted butter; fold in raisins. Pour the filling into the pie shell.
  • Bake in the oven until the filling is set, about 30-40 minutes.
  • In a spacious glass or metal bowl, whisk egg whites until stiff peaks form. Generously spread the meringue over the pie, ensuring full coverage. Bake for 8 to 10 minutes until lightly golden.
