Raisin bread & butter puddings

Ingredients:
  • Melted butter, to grease
  • 30.00 gm butter, at room temperature
  • 8 thick slices raisin loaf, crusts removed
  • 250ml (1 cup) milk
  • 2 eggs, at room temperature
  • 20.00 gm caster sugar
  • 4.40 gm vanilla essence
  • 20.00 ml flaked almonds
  • 13.40 gm golden syrup
Instructions:
  • Preheat the oven to 190°C. Grease four 125ml (1/2-cup) ramekins or ovenproof dishes with the melted butter.
  • Coat each slice of bread with indulgent butter, slice into quarters, and arrange 4 squares in each greased dish.
  • Combine milk, eggs, sugar, and vanilla essence in a medium jug and whisk until smooth.
  • Arrange the dishes on a baking tray, then drizzle half of the egg mixture over the bread, ensuring it soaks in. Gently layer 4 more bread squares into each dish and pour the rest of the egg mixture slowly over the top to fully saturate the bread.
  • Sprinkle almonds over the top of the puddings and bake in a preheated oven for 20 minutes, or until they are set. Expect them to puff up when cooked, then settle as they cool.
  • Drizzle the golden syrup over the puddings before serving.
