Raisin bread & butter pudding

Ingredients:
  • 250ml (1 cup) thin cream
  • 100ml golden syrup
  • 25g butter, at room temperature
  • 4 slices raisin bread
  • Icing sugar, to dust
Instructions:
  • Preheat the oven to 200°C. In a jug, combine eggs, cream, and 80ml (1/3 cup) of golden syrup. Whisk with a fork until well combined.
  • Spread both sides of the bread slices with butter. Spread one side with the remaining golden syrup. Pour the cream mixture into four 150ml ovenproof ramekins. Top each ramekin with a slice of raisin bread, syrup-side up, gently pressing it in without displacing the custard. Place on a baking tray and bake in a preheated oven for 20 minutes, or until the custard rises and the pudding is golden. Dust with icing sugar before serving.
