Ramen Stir-Fry

Whip up a quick and delicious beef skillet with pasta and vegetables for a satisfying meal in no time!
Ingredients:
  • 1 pound beef boneless sirloin
  • 1 tablespoon vegetable oil
  • 2 cups water
  • 1 package (3 ounces) Oriental-flavor ramen noodle soup mix
  • 1 package (16 oz) fresh stir-fry vegetables (broccoli, cauliflower, celery, carrots, snow pea pods and bell peppers) (4 cups)
  • 1/4 cup stir-fry sauce
Instructions:
  • Trim excess fat from the beef. Slice the beef into thin strips. Heat oil in a 12-inch skillet over medium-high heat. Sear the beef in the hot oil for 3 to 5 minutes, stirring occasionally, until nicely browned. Transfer the beef from the skillet and set aside to keep warm.
  • In the same skillet, bring the water to a boil. Add the noodles from the soup mix and stir until slightly softened. Mix in the vegetables.
  • Bring the mixture to a lively boil and cook for 5 to 7 minutes, stirring occasionally, until the veggies are just tender. Add the seasoning packet, stir-fry sauce, and beef, then cook for an additional 3 to 5 minutes, stirring often, until everything is heated through.
