Delicious summer potato salad with creamy mayo-sour cream dressing, hard-boiled egg, celery, green onions, mustard, and dill.
Ingredients:
  • 3 pounds red potatoes, cut into chunks
  • 4 large hard-cooked eggs, chopped
  • 1 cup low-fat sour cream
  • 0.5 cup light mayonnaise
  • 0.33333334326744 celery stalk, chopped
  • 2 green onions, chopped
  • 1 dill pickle, chopped
  • 2 teaspoons Dijon mustard
  • 1 teaspoon white vinegar
  • 1 dash hot sauce
  • 1 tablespoon dried dill weed
  • 0.5 teaspoon garlic powder
  • 1 dash onion salt
  • salt and pepper to taste
Instructions:
  • Start by placing the potatoes in a pot and covering them with water. Bring to a boil and cook for about 10 minutes until easily pierced with a fork. Drain the potatoes and transfer them to a large bowl to cool.
  • Combine eggs, sour cream, mayonnaise, celery, green onions, pickle, mustard, vinegar, and hot sauce in a bowl. Season with dill weed, garlic powder, onion salt, salt, and pepper. Pour over potatoes and gently toss to coat them evenly.
  • Allow the dish to cool in the fridge for a minimum of 3 hours before serving.
