Rich and Gooey Avocado Brownies

Indulgent chocolate brownies made with avocado and honey for a quick and easy treat.
Ingredients:
  • 2 large eggs
  • cooking spray
  • 2 ripe avocados, halved and pitted
  • 0.5 cup raw honey
  • 0.25 cup white sugar
  • 1.5 teaspoons pure vanilla extract
  • 0.5 cup unbleached all-purpose flour
  • 0.5 cup unsweetened cocoa powder (such as Fry's®)
  • 0.5 cup semisweet chocolate chips
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and generously grease an 8x8-inch baking dish with cooking spray.
  • Extract the avocado pulp and transfer it to a food processor. Combine with honey and sugar; blend until velvety. Introduce eggs and vanilla extract, blend thoroughly while occasionally scraping the bowl. Fold in flour, cocoa powder, baking soda, and salt; pulse until fully combined.
  • After blending the batter in the food processor, carefully take out the blade and scrape down the sides to ensure everything is well mixed. Gently fold in the chocolate chips.
  • Spread the brownie mixture evenly in the greased baking dish using a cooking spray-coated spoon.
  • Bake in the oven until a toothpick inserted in the center comes out clean, about 25-30 minutes.
