Roasted baby potatoes with olive oil, rosemary, salt, and pepper - perfect for a quick side dish or delicious snack!
Ingredients:
  • 1.5 pounds unpeeled golden baby potatoes, rinsed and dried thoroughly
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon chopped fresh rosemary, or to taste
  • sea salt and freshly ground black pepper to taste
Instructions:
  • Assemble all ingredients and preheat the oven to 400°F (200°C).
  • Mix together potatoes, olive oil, garlic, rosemary, sea salt, and pepper in a bowl until the potatoes are coated and the garlic is evenly mixed. Spread the mixture onto a rimmed baking sheet.
  • Place on bottom rack in the preheated oven, shaking every 5 minutes to ensure even cooking, until potatoes are golden and tender inside, around 20 minutes.
