Roasted grape crostini with herbs, ricotta cheese - sweet, savory, zesty, impressive appetizer.
Ingredients:
  • 2 cups seedless grapes
  • 2 tablespoons olive oil, divided, or as needed
  • 2 teaspoons fresh thyme leaves
  • 2 teaspoons chopped fresh oregano
  • salt and freshly ground black pepper to taste
  • 1 crusty baguette, cut into 1/2-inch slices
  • 0.5 cup ricotta cheese
  • 1 teaspoon lemon zest
  • 1 tablespoon balsamic glaze, or to taste
Instructions:
  • Preheat your oven to 375 degrees F (190 degrees C) and prepare a baking sheet lined with aluminum foil.
  • Combine grapes with a drizzle of 1 tablespoon olive oil, thyme, and oregano in a medium bowl. Arrange grapes in a single layer on the baking sheet and season with salt and pepper.
  • Roast in the hot oven until grapes are soft and skins slightly wrinkle, for 12 to 15 minutes.
  • Brush baguette slices delicately with the leftover olive oil and arrange them on a separate baking sheet.
  • Toast in the preheated oven until golden brown, for 3 to 4 minutes. Take out the grape mixture and crostini from the oven and allow them to cool slightly.
  • Combine ricotta cheese and lemon zest in a bowl, spread the mixture onto each crostini, top with grape mixture, drizzle with balsamic glaze, and serve.
