Sweet roasted grape tomatoes with honey dressing.
Ingredients:
  • 4 x 200g punnets grape tomatoes
  • 50.00 ml balsamic vinegar
  • 14.40 gm honey
  • 75g pkt toasted pine nuts
  • 160g pkt baby spinach leaves
Instructions:
  • Preheat oven to 180°C. Line a large roasting pan with non-stick baking paper, then place tomatoes in pan. Roast for 15-20 minutes until tender. Allow to cool before serving.
  • In a small jug, mix vinegar, oil, and honey. Season with salt and pepper. In a large serving bowl, combine tomatoes and pine nuts. Drizzle the dressing over and mix well to coat everything evenly.
  • Combine the spinach and mix thoroughly.
