Roasted Grape Flatbread

Indulge in gourmet flatbread with creamy ricotta and roasted grapes.
Ingredients:
  • 1 (8-oz.) pkg. refrigerated pizza dough [Or use a 7-oz. purchased rectangle flatbread and skip ahead to Step 2.]
  • 4 cups seedless red grapes
  • 1 Tbsp. plus 2 tsp. olive oil
  • 1 tsp. chopped fresh rosemary
  • 1/4 tsp. plus 1/8 tsp. salt
  • 1/2 cup ricotta cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup chopped fresh parsley
  • 1/4 tsp. black pepper
  • 1 tsp. white wine vinegar
  • 2 cups watercress and/or arugula
Instructions:
  • Preheat the oven to 425°F (220°C) and grease a baking sheet. Place the pizza dough on the sheet and bake for 6 minutes.
  • Cover your 10x15-inch baking pan with foil, then place the grapes in the pan. Drizzle them with 1 tablespoon of oil and sprinkle with 1/2 teaspoon of rosemary and 1/4 teaspoon of salt. Toss everything together to coat the grapes evenly.
  • Roast grapes in the oven until slightly charred, stirring once halfway through, for about 40 minutes. Transfer the grapes from the baking pan and pour the delicious juices into a small bowl.
  • Combine ricotta, mozzarella, parsley, pepper, and remaining 1/2 teaspoon rosemary in a small bowl.
  • Evenly layer the creamy ricotta mixture onto the partially baked crust. Sprinkle with plump roasted grapes. Bake until the cheese has a delicate golden hue, approximately 10 minutes.
  • Prepare the dressing by combining the reserved grape-roasting juices, vinegar, 2 teaspoons of oil, and 1/8 teaspoon of salt in a bowl. Mix well. Toss the watercress in the dressing and then place the dressed greens on top of the flatbread.
