Delicious mild-spiced Mexican rolled chicken tacos.
Ingredients:
  • 5 boneless, skinless chicken breasts
  • 2 (6 ounce) cans black olives, drained
  • 1 (16 ounce) jar salsa
  • 24 (6 inch) flour tortillas
  • 0.25 cup vegetable oil
Instructions:
  • Boil chicken breasts for 20 minutes until fully cooked, then drain and allow to cool. Shred the chicken using an electric food processor or shred manually, then set aside.
  • Puree the olives in an electric food processor or blender. Combine salsa, olives, and chicken in a mixing bowl. Heat tortillas in the microwave for 20 to 30 seconds.
  • Spoon 1 to 2 tablespoons of the flavorful chicken mixture onto the center of each warm tortilla, then carefully roll them up tightly, securing with toothpicks if needed.
  • In a hot skillet, fry the rolled taco in oil until lightly browned. Drain on paper towels and serve.
