Vibrant lettuce wraps filled with poached salmon, crisp cucumber, jicama, and zesty ginger.
Ingredients:
  • Salmon:
  • 12 ounces skinless salmon fillet, cut into two even pieces
  • 1/2 teaspoon kosher salt
  • 1 teaspoon grated fresh ginger root
  • 4 cups water
  • 1 1/2 teaspoons kosher salt for poaching liquid
  • 1 lemon slice
  • 1 teaspoon extra virgin olive oil
  • 1 teaspoon lemon juice
  • Cucumber, Jicama, Ginger Salad:
  • 3/4 cup of seeded, diced, thin-skinned (English or Persian) cucumber, unpeeled
  • 2/3 cup peeled, small diced jicama
  • 1/4 red onion, thinly sliced
  • 3 tablespoons chopped fresh cilantro
  • 1 teaspoon grated lime zest
  • 2 tablespoons fresh lime juice
  • 2 teaspoons grated fresh ginger
  • 1 tablespoon chopped fresh mint
  • 1 ripe avocado
  • 6 large leaves butter lettuce
Instructions:
  • Enhance the salmon fillets: Massage with 1/2 teaspoon of Kosher salt and a teaspoon of fresh grated ginger. Allow to rest in the refrigerator for 30 minutes as you prepare the remaining ingredients.
  • In a medium bowl, toss together diced cucumbers, jicama, red onion, cilantro, lime zest, lime juice, grated ginger, chopped mint, and salt. Let sit to meld the flavors.
  • Poach the salmon: Make the poaching liquid by combining water, salt, and a lemon slice in a wide pot. Bring to a boil and simmer for 5 minutes. Add the ginger and salt-marinated salmon fillets to the pot and gently simmer for 4 more minutes until cooked through. Remove the salmon from the liquid and transfer to a bowl. Toss with olive oil and lemon juice. Once cooled, gently break the salmon into large flakes.
  • Prepare the lettuce wraps by topping each butter lettuce leaf with avocado slices, salmon chunks, cucumber jicama mixture, and more avocado slices. Fold the lettuce and enjoy the delicious wraps!
