Salmon with Lemon Butter and Pineapple Salsa

Preheat oven. Make flavorful salmon with lemon butter topping and pineapple salsa in 20 minutes. Perfect for summer gatherings.
Ingredients:
  • 1/4 cup butter or margarine, softened
  • 4 teaspoons grated lemon peel
  • 2 teaspoons lemon juice
  • 1 cup chopped fresh pineapple
  • 3 tablespoons chopped fresh cilantro
  • 2 tablespoons finely chopped red onion
  • 1 teaspoon finely chopped jalapeño chile, if desired
  • 4 salmon fillets, about 1 inch thick (1 1/2 lb)
Instructions:
  • Preheat the oven to 375°F. Combine butter, lemon peel, and lemon juice in a small bowl; set aside.
  • Combine pineapple, fresh cilantro, onion, and spicy chile in a bowl, then chill in the refrigerator until ready to serve.
  • Prepare a 13x9-inch pan by lining it with foil. Put the salmon in the pan, skin side down, and season it with salt.
  • Bake the salmon for 8 to 10 minutes until it flakes easily with a fork. Top the cooked salmon with the butter mixture and serve with pineapple salsa.
