Create crispy homemade salt & vinegar chips with minimal ingredients.
Ingredients:
  • 4 potatoes, thinly sliced
  • cold water to cover
  • 3 cups white vinegar
  • 1 cup cold water
  • 2 cups vegetable oil for frying
  • salt to taste
Instructions:
  • Place potato slices in a spacious bowl and cover them completely with cold water. Let the potatoes soak for 30 minutes, gently stirring every 10 minutes; then drain.
  • Lay out potato slices on paper towel and press down gently with additional paper towels to remove excess moisture.
  • In a large bowl, combine vinegar and 1 cup of cold water. Add potatoes and cover the bowl with plastic wrap. Refrigerate for 30 minutes, stirring gently. Chill for another 30 minutes before serving.
  • Preheat oil in a deep-fryer or large saucepan to 375°F (190°C).
  • In batches, lift potato slices from the vinegar mixture with a slotted spoon and carefully place them into the hot oil. Fry the potatoes until they turn golden brown, about 5 to 7 minutes per batch. Transfer the chips to a bowl lined with paper towel to absorb excess oil.
  • Using a paper towel, transfer the chips from the bowl to a separate bowl. Sprinkle with salt. Arrange the salted chips on a paper towel to air dry and cool completely.
