Ingredients:
  • 225 g butter plus extra for greasing
  • 250 g dark chocolate (70% cocoa solids)
  • 225 g golden caster sugar
  • 4 large free-range eggs
  • 150 g plain flour
  • ¼ of a vanilla pod
  • 40 ml double cream
  • 15 g salted butter
  • 60 g caster sugar
  • 40 g golden syrup
Instructions:
  • For the caramel, split the vanilla pod and combine it with cream, half the butter, and sea salt in a pan. Heat for 2-3 minutes until bubbling, then set aside. In a separate pan, melt caster sugar and golden syrup without stirring until golden. Remove from heat, stir in cream mixture, add remaining butter, and set aside. Line a baking tin with wet greaseproof paper, pour in caramel, sprinkle with salt, chill for 30 minutes. For the brownies, preheat oven to 180ºC/350ºF. Melt butter, stir in chocolate until melted. Remove from heat, mix in sugar, then whisk in eggs. Fold in flour, pour into tin. Dot caramel on top, drizzle remaining caramel, bake for 25 minutes until gooey. Cool, cut, and serve.
