Satay vegetable & noodle stir-fry

Ingredients:
  • 2 200g pkts udon noodles
  • 18.20 gm peanut oil
  • 1 medium red onion, halved, cut into wedges
  • 1 bunch choy sum, ends trimmed, leaves and stems separated, washed
  • 200g button mushrooms, sliced
  • 1 125g pkt fresh baby corn, washed, halved
  • 1 490g jar Malaysian satay sauce (Sakims brand)
  • 125.00 ml fresh coriander leaves
Instructions:
  • In a large bowl, soak noodles in boiling water for 2 minutes. Drain and set aside.
  • In a large wok over high heat, heat oil. Add onion and choy sum stems (save leaves for later) and stir-fry for 2 minutes. Then, add mushrooms and baby corn and stir-fry for 2 more minutes until corn is almost tender. Finally, toss in satay sauce and noodles.
  • Sauté noodles for 2-3 minutes until heated. Toss in reserved choy sum leaves and cook for 1 minute until wilted. Finish with a sprinkle of fresh coriander leaves before serving.
