Sauteed greens with currants

Healthy superfood side bursting with fresh flavors and low in fat.
Ingredients:
  • 20.00 ml currants
  • 20.00 ml red wine vinegar
  • 9.20 gm extra virgin olive oil
  • 1 small brown onion, halved, thinly sliced
  • 1 garlic clove, thinly sliced
  • 1/4 tsp dried chilli flakes
  • 1 bunch silverbeet, stems removed, coarsely chopped
  • 1 bunch English spinach, stems removed, coarsely chopped
  • Lemon wedges, to serve
Instructions:
  • In a small bowl, mix the currants and vinegar together. Let sit for 10 minutes to enhance the flavors.
  • In a pan over gentle heat, warm the oil. Sauté the onion until soft, about 3 minutes. Add the garlic and chili, cook until fragrant. Incorporate the currant mixture until liquid reduces.
  • Place silverbeet in the pan and cook covered for 2 minutes until starting to wilt. Add spinach, cover, and cook for another 2 minutes. Uncover and cook for another 2 minutes until vegetables are tender. Season with pepper and serve with lemon wedges.
