Savoury mince recipe for two

Whip up this flavorful mince dish for a quick dinner for two, with leftovers for a delicious lunch the next day.
Ingredients:
  • 9.20 gm olive oil
  • 1 small brown onion, finely chopped
  • 250g beef mince
  • 20.00 ml instant beef gravy powder
  • 125.00 ml tomato puree
  • 200g desiree potatoes, peeled, diced
  • 150g carrots, peeled, diced
  • 100g button mushrooms, quartered
  • 125.00 ml frozen peas and corn mixture, thawed
  • Steamed white rice, to serve
Instructions:
  • In a saucepan over medium-high heat, heat oil. Add onion and minced meat. Cook for 5 minutes until browned, breaking up the meat with a wooden spoon. Stir in gravy powder, tomato puree, and 1/2 cup cold water until well combined.
  • - Combine potato and carrot in a pot, sprinkle with salt and pepper, cover, and bring to a boil. - Reduce heat to medium-low and simmer for 20 minutes until potato is just tender. - Stir in mushrooms and pea mixture, and cook for an additional 5 minutes until heated through. - Serve alongside rice.
