Create nostalgic applesauce cupcakes using Betty Crocker™ Super Moist™ cake mix and frosting for a sweet treat reminiscent of school days.
Ingredients:
  • 1 box Betty Crocker™ Super Moist™ Yellow Cake Mix
  • 1/2 teaspoon ground cinnamon
  • 3/4 cup apple juice or cider
  • 1/3 cup unsweetened applesauce
  • 3 eggs
  • 1/2 cup butter or margarine
  • 1 cup packed brown sugar
  • 1/4 cup milk
  • 2 cups powdered sugar
  • 1/2 cup from 1 tub (12 oz) Betty Crocker™ Whipped Fluffy White Frosting
  • 48 miniature chocolate candy bars (from 12-oz bag), unwrapped
Instructions:
  • Preheat your oven to 350°F (or 325°F for dark or nonstick pans). Line 24 regular-size muffin cups with paper baking cups. In a large bowl, mix cupcake ingredients with an electric mixer on low speed for 30 seconds, then switch to medium speed for 2 minutes. Pour the batter evenly into the muffin cups. Bake for 18 to 23 minutes until a toothpick inserted in the center comes out clean. Let them cool in the pans for 10 minutes, then transfer to a cooling rack. Allow them to cool completely for about 30 minutes before enjoying.
  • Melt butter in a 2-quart saucepan over medium heat. Add brown sugar and bring to a boil while stirring continuously. Mix in milk and bring back to a boil, then remove from heat. Use an electric mixer on low to beat in powdered sugar until smooth. Frost cupcakes and if the frosting thickens, blend in 1/2 teaspoon milk.
  • Decorate each cupcake by piping a computer keyboard and screen onto 2 chocolate candy bars. Next, pipe frosting along one long edge of the keyboard and place the screen on top. Add a small amount of frosting to the bottom of the computer and place it on the cupcake. Lastly, store the decorated cupcakes loosely covered.
