Sesame beef noodle stir-fry

Ingredients:
  • 131.25 gm dark soy sauce
  • 2 tsp sesame oil
  • 10.00 gm caster sugar
  • 250g Vermicelli Rice Noodles
  • 12.00 gm sesame seeds
  • 36.40 gm peanut oil
  • 2 eggs, lightly beaten
  • 500g beef fillet, thinly sliced diagonally
  • 1 carrot, cut into thin sticks
  • 1 brown onion, halved, thinly sliced
  • 125g button mushrooms, sliced
  • 2 green onions, thinly sliced
Instructions:
  • In a bowl, combine soy sauce, sesame oil, and sugar. Set the mixture aside. Place noodles in a large bowl and cover with cold water. Let them stand for 10 minutes or until tender, then drain.
  • 1. Heat a wok over medium heat, then toast sesame seeds until golden for about 2 minutes. Set aside. 2. Add 1 teaspoon of peanut oil to the wok, then swirl to coat. Pour in the eggs to create a thin omelette. Cook for 1 minute, then transfer to a board. Roll up tightly, slice thinly, and set aside.
  • Turn up the heat to high and pour in 2 teaspoons of peanut oil into the wok. Add one-third of the beef and stir-fry for 1 minute or until browned. Set aside. Repeat this process two more times with the remaining oil and beef.
  • Drizzle the last teaspoon of oil into the wok along with the carrot, onion, and mushrooms. Stir-fry for 3 minutes until tender. Add back the beef, green onions, egg, and sesame seeds. Pour in the soy mixture and noodles. Toss everything together until heated through. Serve and enjoy!
