Sesame longevity noodles

Celebrate Chinese New Year with uncut longevity noodles for good luck.
Ingredients:
  • 65.63 gm soy sauce
  • 63.75 gm chicken style liquid stock
  • 3 tsp sesame oil
  • 2 x 250g packets dried long-life noodles
  • 9.20 gm vegetable oil
  • 3cm piece fresh ginger, peeled, grated
  • 1 medium brown onion, halved, thinly sliced
  • 1 medium red capsicum, thinly sliced
  • 250.00 ml beansprouts, trimmed
  • 375.00 ml finely shredded wombok (Chinese cabbage)
  • Toasted sesame seeds, to serve
  • Sliced green onions, to serve
Instructions:
  • In a jug, mix soy sauce, stock, and sesame oil. Place noodles in a large heatproof bowl and cover with boiling water. Let stand for 5 minutes until tender, then drain.
  • - Preheat a wok over high heat and add vegetable oil. Once hot, add garlic, ginger, and onion. Stir-fry until onion is softened. - Add capsicum and stir-fry for another 1 to 2 minutes. - Toss in noodles, beansprouts, cabbage, and soy mixture. Stir-fry until heated through. - Serve the dish garnished with sesame seeds and green onion.
