Simple Shrimp Pad Thai

Whip up a quick and delicious shrimp pad thai with a flavorful Asian sauce, topped with crunchy peanuts and scallions.
Ingredients:
  • 1 (8 ounce) package wide rice noodles
  • 0.25 cup ketchup
  • 1 tablespoon dark sesame oil
  • 1 tablespoon fish sauce
  • 1 tablespoon soy sauce
  • 0.5 teaspoon red pepper flakes
  • 2 tablespoons canola oil
  • 1 pound uncooked medium shrimp, peeled and deveined
  • 2 eggs, beaten
  • 1 bunch green onions, chopped
  • 1 cup fresh bean sprouts
  • 3 cloves garlic, minced
  • 0.5 cup unsalted dry-roasted peanuts, chopped
Instructions:
  • Bring a pot of water to a boil and soak noodles until softened, about 15 minutes. Drain before serving.
  • Combine the ketchup, sesame oil, fish sauce, soy sauce, and red pepper flakes in a bowl and let it sit.
  • In a large nonstick skillet over medium-high heat, saute shrimp in 1 teaspoon of oil until firm and opaque, about 3 to 5 minutes. Remove shrimp and add the rest of the oil to the skillet.
  • - Crack eggs into the skillet and scramble gently for about 5 minutes. - Toss in green onions, bean sprouts, and garlic; sauté briefly until fragrant, around 1 minute. - Mix in noodles, ketchup blend, and cooked shrimp; stir and cook for an additional 3 minutes. - Finish by topping with peanuts.
