Six-Minute, Single-Serving "Spaghetti"

Quick and easy single-serving microwave spaghetti for college students craving a delicious Italian meal.
Ingredients:
  • 1 (3 ounce) package ramen noodles, without flavor packet
  • 1 cup fresh baby spinach
  • water to cover
  • 0.25 cup pasta sauce
  • 1 tablespoon sun-dried tomatoes packed in oil, drained and chopped
  • 1 tablespoon extra-virgin olive oil, or to taste
  • 2 tablespoons grated Parmesan cheese
Instructions:
  • Break the block of ramen into 4 equal pieces and place them in a medium microwave-safe bowl. Add spinach on top and cover with water until noodles are submerged. Microwave on high for 3 1/2 minutes, or until noodles are cooked and spinach is wilted.
  • Drain excess water. Mix in pasta sauce, sun-dried tomatoes, and olive oil until noodles are coated. Microwave for about 30 seconds to warm the sauce. Sprinkle with Parmesan cheese before serving.
