Prepare a delicious and easy breakfast for the family with a slow-cooked dish packed with bell peppers, onions, and cheese.
Ingredients:
  • 1 cup Almond Breeze Unsweetened Original Almondmilk
  • 30 oz frozen hash browns
  • 16 oz diced ham
  • 1 yellow bell pepper seeded and diced
  • 1 red bell pepper seeded and diced
  • 5 green onions thinly sliced
  • 12 eggs
  • 8 oz shredded cheese
  • Salt and pepper to taste
  • Chives to garnish
Instructions:
  • In a large bowl, whisk together eggs and Almond Breeze Unsweetened Original Almondmilk until combined. Season with salt and pepper to taste.
  • Coat a 6 qt slow cooker generously with cooking spray or line it with a slow cooker liner.
  • First, evenly distribute half of the frozen hash browns, diced ham, diced bell peppers, green onions, and shredded cheese in the slow cooker while seasoning each layer with salt and pepper. Follow by repeating this process with the remaining ingredients. Finally, pour the egg mixture over the top of the layers in the slow cooker.
  • Slow cook on Low for 7 to 8 hours until the eggs are perfectly set. Garnish with fresh chives for an extra touch of flavor, if desired.
