Easy slow cooker pulled pork with juicy pineapple - simply set it and forget it for a mouthwatering meal.
Ingredients:
  • 1 (20 ounce) can unsweetened crushed pineapple in 100% pineapple juice
  • 2 tablespoons minced garlic
  • 2 tablespoons ground cumin
  • 2 teaspoons kosher salt
  • 1 teaspoon red pepper flakes
  • 1 pinch freshly ground black pepper to taste
  • 1 (3 pound) boneless pork butt roast
Instructions:
  • Mix together the pineapple, garlic, cumin, salt, red pepper flakes, and pepper in a bowl.
  • Add the pork roast to a slow cooker and generously pour over the pineapple mixture. Cover and slow cook for about 8 hours until the pork is tender and reaches an internal temperature of at least 145 degrees F (63 degrees C).
  • Take out the pork roast from the slow cooker, trim any fat, shred the meat with two forks, and toss it back in the slow cooker to combine with the juices.
