Create irresistible Santa Fe chicken in the slow cooker by combining chicken breasts, black beans, corn, salsa, and cream cheese for an effortless meal.
Ingredients:
  • 1 (15 ounce) can black beans, drained
  • 1 (14 ounce) can whole kernel corn
  • 0.5 cup salsa
  • 4 skinless, boneless chicken breast halves
  • 1 (8 ounce) package cream cheese, cut into cubes
  • 8 tortillas
Instructions:
  • In a slow cooker, mix together black beans, corn, and 1/2 cup salsa. Place chicken breasts on top of the bean mixture and spread the remaining 1/2 cup salsa over the chicken.
  • Cook covered on High for 3 hours.
  • Add the luscious cream cheese, cover, and simmer for an additional 30 minutes. Using two forks, shred the chicken into delectable strands.
