Slow-Cooker Santa Fe Turkey Breast

Turkey infused with zesty salsa and chiles for a flavorful Mexican twist.
Ingredients:
  • 1 bone-in split turkey breast (about 5 lb), thawed if frozen
  • 1 cup thick & chunky salsa
  • 2 tablespoons honey
  • 1 tablespoon chopped chipotle chile in adobo sauce (from 7-oz can)
  • 2 tablespoons cornstarch
  • 2 tablespoons cold water
Instructions:
  • Grease a 5- to 6-quart slow cooker. Add turkey to cooker. Combine salsa, honey, and chile in a small bowl, then pour the mixture over the turkey.
  • Cover and simmer gently over Low heat for 6 to 7 hours.
  • Transfer the turkey from the cooker to a platter. Skin the turkey breast, slice it into 24 pieces, and place them on the platter, keeping them warm. Pour the cooking juices into a 4-cup microwavable measuring cup or bowl. In a small bowl, combine cornstarch and cold water until smooth, then mix it into the juices in the cup. Microwave uncovered on High for 3 to 5 minutes, stirring every minute, until the mixture boils and thickens. Serve the gravy with the turkey.
