Slow-Cooker Carolina Pulled-Pork Sandwiches

Elevate your next gathering with tangy slow-cooked pulled pork sandwiches.
Ingredients:
  • 1 boneless pork shoulder blade roast (3 lb)
  • 1 tablespoon packed brown sugar
  • 1 tablespoon kosher (coarse) salt
  • 1 tablespoon pepper
  • 1 tablespoon paprika
  • 2 cups cider vinegar
  • 1 cup ketchup
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon red pepper sauce
  • 12 kaiser rolls, split
  • 1 pint (2 cups) coleslaw with sweet-and-sour dressing (from deli)
Instructions:
  • Prepare your 3- to 4-quart slow cooker by spraying it with cooking spray. Trim the fat from the pork and place it in the slow cooker. In a small bowl, combine brown sugar, salt, pepper, and paprika, then rub the mixture over the pork.
  • Combine all remaining ingredients, except for rolls and coleslaw, in a medium bowl and pour the mixture into the slow cooker.
  • Cover and simmer on low heat for 8 to 9 hours to let the flavors develop beautifully.
  • Take the pork out of the cooker and place it on a cutting board. Use two forks to shred the pork, then mix it back into the cooker until well combined.
  • Carefully pile 1/2 cup of pork mixture onto the bottom half of each roll using a slotted spoon. Top each with 2 tablespoons of coleslaw and cover with the top halves of the rolls. Keep the pork warm on Low heat for up to 2 hours, stirring occasionally.
