Slow-Cooker Pork Chops with Cheesy Corn Bread Stuffing

Delicious corn bread stuffing cooked with juicy pork chops for a comforting slow-cooked meal.
Ingredients:
  • 6 pork boneless loin chops, about 3/4 inch thick (2 pounds)
  • 1 teaspoon peppered seasoned salt
  • 1 bag (16 oz) corn bread stuffing mix (6 cups)
  • 1 medium onion, chopped (1/2 cup)
  • 1/2 cup chopped red or green bell pepper
  • 1/2 teaspoon salt
  • 1/2 teaspoon dried thyme leaves
  • 2 1/2 cups water
  • 1 cup finely shredded Cheddar cheese (4 oz)
Instructions:
  • Prepare a 12-inch nonstick skillet with cooking spray. Season the pork chops with peppered seasoned salt. Cook the pork in the skillet over medium heat for 5 to 6 minutes, turning occasionally, until both sides are nicely browned.
  • Grease a 5- to 6-quart slow cooker with cooking spray. Combine all ingredients, excluding cheese, in the slow cooker. Place the pork on top of the stuffing, layering as needed.
  • Simmer covered on Low heat for 5 to 6 hours.
  • Take out the pork from the cooker. Mix cheese into the stuffing in the cooker until it melts. Serve the pork with the cheesy stuffing.
