Year-round slow cooker smoky pulled chicken breast for bright, flavorful meals.
Ingredients:
  • 18.20 gm extra virgin olive oil
  • 4 (about 1.2kg) chicken breast fillets
  • 1 red onion, finely chopped
  • 3 garlic cloves, crushed
  • 10.00 gm ground cumin
  • 10.00 gm sweet paprika
  • 20.00 ml dried oregano leaves
  • 3 tsp ground coriander
  • 250ml (1 cup) Mutti Tomato Passata
  • 125ml (1/2 cup) Chicken Style Liquid Stock
  • 2 chipotle in adobo sauce, chopped
  • 32.00 gm brown sugar
Instructions:
  • In a large frying pan over medium heat, heat the oil until shimmering. Sear the chicken for 5 minutes on each side until golden brown. Transfer the chicken to a slow cooker.
  • - Start by sautéing the onion in a pan until softened, then add the garlic for aroma. - Sprinkle in cumin, paprika, oregano, and coriander for flavor. - Pour in passata, stock, and chipotle, bringing it to a gentle simmer. - Pour this savory mixture over the chicken in a slow cooker, cooking on low heat until tender for about 3 hours.
  • Using tongs, transfer the chicken to a plate and let it cool slightly. Use forks to shred the chicken coarsely, then return it to the slow cooker. Stir in the sugar and serve.
