Smoked Sausage with Spaghetti Squash

Effortlessly steam spaghetti squash in the microwave for a simple one-skillet dinner.
Ingredients:
  • 1 medium spaghetti squash (about 2 1/2 lb.), halved and seeded
  • 0.25 cup water
  • 1 tablespoon olive oil
  • 1 (14 ounce) package smoked sausage, bias-sliced into 1-inch pieces
  • 1 onion, coarsely chopped
  • 1 orange bell pepper, coarsely chopped
  • 1 (24 ounce) jar vodka sauce or creamy rosa pasta sauce
  • 8 ounces frozen broccoli florets (about 3 1/2 cups)
  • 1 tablespoon shaved Parmesan cheese, or to taste
  • 4 leaves fresh basil for garnish
Instructions:
  • Arrange the squash halves with the cut sides facing down in a microwave-safe dish. Fill the dish with water and cover it. Microwave on High until the squash is tender, approximately 12 minutes.
  • Heat oil in a large skillet over medium-high heat. Sauté sausage until lightly browned, about 5 minutes, then transfer to a plate. In the same skillet, sauté onion and bell pepper until just tender, 6 to 8 minutes.
  • Combine the vodka sauce and broccoli in a skillet, simmer covered until broccoli is crisp-tender, about 3 to 4 minutes. Add sausage back to the skillet and stir to combine.
  • Gently lift out squash halves. Use a fork to shred the squash into a serving dish. Add sausage mixture on top. Sprinkle with Parmesan and basil for a beautiful finishing touch.
