Smoky mac 'n' cheese

Indulge in individual mac 'n' cheese bakes with crispy hickory-smoked bacon topping.
Ingredients:
  • 350g macaroni
  • 6 rashers hickory-smoked middle bacon, coarsely chopped
  • 50g butter
  • 3.75 gm smoked paprika
  • 35g plain flour
  • 750ml milk
  • 40g parmesan
  • 4 spring onions, thinly sliced
  • 240g cheddar cheese
Instructions:
  • Boil the macaroni in a large saucepan of water until it's al dente following the instructions on the packet. Then, drain well.
  • Warm a large saucepan over medium heat. Sauté bacon for 5 minutes or until crispy, stirring occasionally. Transfer bacon to a bowl using a slotted spoon. Melt butter in the same pan. Stir in paprika and sauté for 30 seconds until fragrant. Add flour and cook for 1 minute until slightly grainy. Pour in milk and whisk until smooth. Cook for 5-7 minutes, stirring constantly, until mixture boils and thickens. Remove from heat. Stir in half of the bacon, parmesan, spring onion, and three-quarters of the cheddar cheese. Season to taste.
  • 1. Preheat the grill to medium heat. 2. Stir the macaroni into the sauce. 3. Divide the mixture evenly among six 1 1/2-cup (375ml) ovenproof dishes.
  • Sprinkle the remaining crispy bacon and sharp cheddar on top. Place it under the grill for 2 minutes, or until it turns golden and is fully warmed.
