30-Minute Kid-Friendly Plant-Based Stir Fry with Fresh Veggies and Homemade Asian Sauce.
Ingredients:
  • 270g soba noodles
  • 36.80 gm avocado oil or olive oil
  • 240g pkt Nature’s Kitchen Chicken Style Meat-Free Tenders
  • 1 red onion, thinly sliced
  • 2 x 150g pkts Mixed Exotic Mushrooms, sliced
  • 1 bunch Chinese broccoli, trimmed, chopped
  • 20.00 gm mirin seasoning
  • 21.00 gm soy sauce
  • 3 tsp sesame oil
  • 12.00 gm miso paste
Instructions:
  • Boil noodles in a large saucepan of water according to package instructions until al dente. Then, rinse with cold water to cool them down and drain thoroughly.
  • Heat half of the avocado oil or olive oil in a large non-stick frying pan over medium-high heat. Cook the tenders, turning occasionally, until golden brown and heated through, about 5 minutes. Transfer to a plate and cover with foil to keep warm.
  • - Sauté onion and garlic until onion softens. Next, add the remaining oil to the pan along with the mushroom. Sauté until the mushroom is golden. Then, add Chinese broccoli and continue to sauté until just wilted.
  • Combine mirin, soy sauce, sesame oil, and miso in a small bowl and whisk until smooth. Divide noodles among serving bowls, drizzle with the dressing, then top with the mushroom mixture and tenders.
