Strawberry soda cake with pink gelatin and fluffy white frosting - a perfect summer delight.
Ingredients:
  • 1 (15.25 ounce) package white cake mix
  • 1 cup water
  • 3 large egg whites
  • 0.5 cup vegetable oil
  • 1.5 cups boiling water
  • 1 (6 ounce) package strawberry flavored Jell-O®
  • 16 fluid ounces strawberry flavored carbonated beverage
  • 1.5 cups milk
  • 1 (5 ounce) package instant vanilla pudding mix
  • 1 (8 ounce) container frozen whipped topping, thawed
Instructions:
  • Preheat the oven to 350°F (175°C) while you generously grease a 9x13-inch baking dish.
  • In a large bowl, use an electric mixer on low speed to combine cake mix, water, egg whites, and oil until moistened, for about 30 seconds. Increase speed to medium and beat for an additional 2 minutes until well combined. Pour the batter into the prepared baking dish.
  • Bake in the oven until a toothpick inserted in the center comes out clean, for 23 to 28 minutes.
  • Once the cake is out of the oven, use a wooden skewer or toothpick to poke holes in it.
  • In a medium bowl, mix the boiling water with the strawberry gelatin until dissolved, then let it cool slightly. Add the soda and pour the mixture slowly over the cake, making sure it soaks in. Refrigerate until the cake is cool.
  • Create the frosting by mixing milk and pudding mix in a medium bowl until smooth and thick. Gently fold in the thawed whipped topping until fully combined.
  • Generously coat the chilled cake with frosting and refrigerate for a minimum of 4 hours before enjoying.
