Fluffy scones made light with soda water - a quick and easy family favorite!
Ingredients:
  • 450g (3 cups) self-raising flour
  • Pinch of salt
  • 180ml (3/4 cup) pouring cream
  • extra pouring cream, to brush
  • 180ml (3/4 cup) soda water
  • Strawberry jam, to serve
  • Whipped cream, to serve
Instructions:
  • Preheat your oven to 220C/200C fan forced and line a large baking tray with baking paper for easy cleanup and perfect baking every time.
  • In a large mixing bowl, combine the sifted flour, sugar, and salt. Create a well in the center and pour in the cream and soda water. Mix with a flat-bladed knife until just combined. Transfer the dough to a lightly floured surface and gently knead until smooth. Press into a 2cm thick disc.
  • Cut 12 rounds from the dough using a 6cm round cutter, making sure to cut them as close together as possible to minimize re-rolling.
  • Arrange the scones closely together on the baking sheet and delicately brush the tops with extra cream. Bake until they are puffed up and have a beautiful golden brown color, about 15 minutes. Let them cool on a wire rack.
  • Enjoy the scones with jam and cream.
