Coconut, chocolate chips, and almonds in chewy cookies.
Ingredients:
  • 1.5 cups brown sugar
  • 1 cup solid vegetable oil-butter spread (such as Smart Balance® sticks), softened
  • 1 egg
  • 2 cups shredded unsweetened coconut
  • 1.5 cups whole wheat flour
  • 1 cup rolled oats
  • 1 cup dark chocolate chips
  • 1 cup chopped unsalted almonds
  • 1 tablespoon plain Greek yogurt
Instructions:
  • Preheat oven to 350°F (175°C) for a perfect bake.
  • Use an electric mixer to blend brown sugar, vegetable oil butter spread, and egg until smooth in a bowl. Mix in vanilla extract, baking soda, and salt. Then, add coconut, flour, and oats and stir until just combined. Gently fold in chocolate chips, almonds, and yogurt.
  • Scoop dough onto ungreased baking sheets, leaving 2 inches of space between each mound.
  • Bake in the oven until beautifully golden, about 9 to 11 minutes.
