Try a quick and flavorful Southwest pasta for a low-fat meal option.
Ingredients:
  • 8 oz uncooked fettuccine
  • Olive oil-flavored cooking spray
  • 1 cup thick & chunky salsa
  • 1/3 cup frozen corn
  • 1/4 cup water
  • 2 tablespoons chili sauce
  • 1/2 teaspoon ground cumin
  • 1 can (15 oz) Progresso™ black beans, drained, rinsed
  • 1/4 cup chopped fresh cilantro
Instructions:
  • Prepare the fettuccine according to the package instructions. Lightly coat the fettuccine with cooking spray, tossing well after each spray. Remove from the saucepan and cover to keep warm.
  • In the same saucepan, combine all the remaining ingredients except for the cilantro. Cook over medium heat for 4 to 6 minutes, stirring occasionally, until the corn is tender.
  • Serve the fettuccine in 4 bowls, generously topping each portion with 3/4 cup of the delicious sauce mixture. Finish by sprinkling cilantro over each bowl for a fresh touch.
