Make quick and delicious sweet and savory chicken thighs. Pair with teriyaki or garden vegetables for a complete, budget-friendly meal.
Ingredients:
  • 1/4 cup packed brown sugar
  • 1/4 cup soy sauce
  • 1 tablespoon rice vinegar
  • 1/2 teaspoon ground ginger
  • 1 clove garlic, finely chopped
  • 1 1/2 lb skin-on bone-in chicken thighs
  • 1 tablespoon vegetable oil
Instructions:
  • Preheat oven to 375°F. Combine brown sugar, soy sauce, vinegar, ginger, and garlic in a small bowl, whisking until fully blended. Set mixture aside for later use.
  • Preheat a 10-inch ovenproof skillet or roasting pan over medium-high heat. Coat the chicken with oil and place it skin side down in the skillet. Sear the chicken without moving for 3 to 5 minutes until the skin is nicely browned and easily releases from the skillet.
  • 1. Place the chicken on a plate. Discard the drippings from the skillet. Return the chicken to the skillet with the skin side up, then generously pour the brown sugar-soy mixture over the chicken.
  • Roast until chicken juices run clear when thickest part is cut to bone, at least 165°F. Serve with sauce.
