Festive holiday cookies with a rich blend of butter, sugar, and cinnamon.
Ingredients:
  • 250.00 ml plain flour
  • 90.00 gm brown sugar
  • 2.50 gm cinnamon
  • 1.25 gm mixed spice
  • 75g unsalted butter, chopped
  • 83.75 gm golden syrup
  • White chocolate writing fudge, for decorating
Instructions:
  • Prepare two baking trays by lining them with non-stick baking paper.
  • In a large bowl, sift together the flour, sugar, and spices. Use your fingertips to rub in the butter until the mixture resembles coarse breadcrumbs. Stir in the golden syrup until a soft dough forms. Transfer the dough to a lightly floured surface and knead for 1-2 minutes until smooth. Cover the dough with plastic wrap and refrigerate for 30 minutes.
  • Preheat your oven to 180C (160C fan-forced). Roll out the dough on a lightly floured surface to 5mm thickness. Use cookie cutters to create shapes and place them on lined trays with space in between. Chill in the fridge for 10 minutes.
  • Bake for 10 minutes until lightly golden. Allow to cool on trays, then transfer to an airtight container. Decorate with writing fudge with outlines or dots right before serving.
