Delicious spiced cookie bars made with sugar cookie mix, spiced cookie butter, and white chips, finished with a cookie-butter drizzle. Perfect for a bake sale or quick indulgence at home!
Ingredients:
  • 1 pouch (17.5 oz) Betty Crocker™ Sugar Cookie Mix
  • 1/2 cup butter, softened
  • 1/2 cup Lotus Biscoff™ cookie butter
  • 2 teaspoons ground cinnamon
  • 1 egg
  • 1/2 cup white vanilla baking chips
  • 3 tablespoons white vanilla baking chips
  • 1 tablespoon butter, softened
  • 1 tablespoon Lotus Biscoff™ cookie butter
  • 1/3 cup powdered sugar
  • 2 teaspoons milk
Instructions:
  • Preheat oven to a toasty 350°F and generously coat a 13x9-inch pan with cooking spray.
  • Combine the cookie mix, 1/2 cup softened butter, 1/2 cup cookie butter, cinnamon, and egg in a large bowl until a soft dough forms. Gently fold in 1/2 cup white vanilla baking chips. Press the dough evenly into a pan.
  • Bake for 18 to 22 minutes or until a toothpick inserted in the center comes out clean. Allow to cool for 30 minutes.
  • Microwave 3 tablespoons of white vanilla baking chips in a small microwavable bowl on High for 20 to 40 seconds until smooth. Transfer the melted chips into a small resealable food-storage plastic bag and snip off a tiny corner. Squeeze the bag to drizzle the melted chips over the top of the bar.
  • Combine softened butter, cookie butter, powdered sugar, and milk in a small bowl until smooth. Transfer mixture into a small resealable plastic bag, seal it partially, and cut a tiny corner off the bag. Squeeze the bag to pipe the mixture over the top of the bar. Allow it to cool completely for about 1 1/2 hours until the toppings are set. Then, cut into 6 rows by 4 rows to serve.
  • Transfer the dish to an airtight container for storage.
