"Tangy-sweet crostini canapés, perfect for appetizers."
Ingredients:
  • 1/2 teaspoon seasoned salt
  • 1/2 teaspoon garlic pepper
  • 1/4 teaspoon ground sage
  • 1 pork tenderloin (1 pound)
  • 36 slices (from 10-ounce loaf) baguette-style French bread, 1/4 to 1/2 inch thick
  • 1/4 cup Dijon mustard
  • 3/4 cup (from 8.5-ounce jar) apple-cranberry chutney
  • 1/3 cup crumbled blue cheese
  • Fresh marjoram leaves
Instructions:
  • Preheat oven to 425°F. Combine seasoned salt, garlic pepper, marjoram, and sage in a small bowl. Rub the mixture over the pork and place it in a shallow roasting pan. Bake uncovered for 20 to 25 minutes, or until a meat thermometer reads 155°F when inserted into the thickest part of the pork. Cover the pork with aluminum foil and let it rest for 10 to 15 minutes, or until the thermometer reads 160°F.
  • Lower the oven temperature to 375°F. Arrange bread slices on an ungreased 15 1/2x10 1/2x1-inch jelly roll pan. Bake for approximately 5 minutes, or until the slices are crispy. Let them cool before using.
  • Thinly slice hot pork (or cool it if you prefer). Spread a touch of mustard on each bread slice. Add a slice of pork, a spoonful of chutney, a sprinkle of cheese, and a few marjoram leaves on top of each.
