Spicy white wine marinade with rosemary, garlic, and a kick of crushed red pepper and hot sauce. Customize spiciness to your liking with extra hot sauce.
Ingredients:
  • 1 (1 1/2-pound) skin-on center-cut salmon fillet
  • 6 fluid ounces dry white wine
  • 1 tablespoon olive oil
  • 1 clove garlic, minced
  • 1 teaspoon crushed red pepper flakes
  • 1 teaspoon hot sauce
  • 0.5 teaspoon dried rosemary
  • 0.125 teaspoon ground black pepper
Instructions:
  • Divide the fish into four portions.
  • Combine wine, olive oil, garlic, pepper flakes, and hot sauce in a small bowl. Pour the mixture over the salmon in a sealable bag, removing any extra air before sealing. Refrigerate for 1 hour, flipping the bag after 30 minutes. Take the salmon out of the marinade, allowing excess to drip off. Place on a plate and let stand at room temperature for 15 minutes. Discard any leftover marinade.
  • Heat up the outdoor grill to medium heat and lightly oil the grate.
  • Place the salmon, flesh-side down, on the hot grill with the lid closed for 3 minutes. Flip and grill for an additional 3 to 4 minutes. Optionally, sprinkle with salt before serving.
