Spinach-Turkey Sliders

Fall turkey sliders with creamy mayo and vibrant spinach, perfect for a spooky Halloween appetizer.
Ingredients:
  • 1 bag (6 oz) fresh baby spinach leaves
  • 3 teaspoons olive oil
  • 1 1/2 lb lean ground turkey
  • 1/4 cup basil pesto
  • 1/4 teaspoon freshly ground pepper
  • 2 oz provolone cheese, shredded (1/2 cup)
  • 1/2 cup mayonnaise
  • 12 mini burger buns (about 2 1/2 inches in diameter)
Instructions:
  • Finely chop 3 cups of fresh spinach. Heat 1 teaspoon of oil in a 12-inch nonstick skillet over medium-high heat. Add the chopped spinach and sauté for 1 minute until wilted. Drain any excess liquid, if needed.
  • Combine ground turkey, tender wilted spinach, 2 tablespoons of flavorful pesto, and a touch of pepper in a spacious bowl. Shape the mixture into 12 evenly sized patties, each 1/4 inch thick.
  • Using the same skillet, warm 1 teaspoon of oil over medium-high heat. Cook 6 patties for 4 to 6 minutes, flipping once, until a thermometer inserted in the center reads 165°F. Transfer the patties to a platter, sprinkle each with 2 teaspoons of cheese, and cover to keep warm. Repeat the process with the remaining 1 teaspoon of oil, 6 patties, and cheese.
  • In a small bowl, combine mayonnaise with the remaining 2 tablespoons of pesto for a creamy and flavorful sauce.
  • Spread a generous 2 1/2 teaspoons of the delicious mayonnaise mixture on each bun bottom. Add a juicy burger and the remaining fresh spinach, then close it off with the bun top. Enjoy your flavorful sliders!
