Transform summer squash into delicious "noodles" using a spiralizer or vegetable peeler. Bake and top with Parmesan for a tasty side dish.
Ingredients:
  • 1 zucchini (6 inches)
  • 1 yellow summer squash (6 inches)
  • 2 teaspoons olive oil
  • 1/4 teaspoon salt
  • Freshly ground pepper, chopped parsley and shredded Parmesan, if desired
Instructions:
  • Preheat the oven to 400°F and line a 15x10x1-inch pan with foil.
  • Prepare the squash by cutting off the ends and using a spiralizer following the manufacturer's instructions. Place the spiralized squash in a pan, drizzle with oil, sprinkle with salt, toss to coat well, and spread in a single layer.
  • Bake for 8-10 minutes until tender, then top with a sprinkle of pepper, parsley, and Parmesan for added flavor.
