Spring Berry Poke Cake

Spring-inspired poke cake topped with whipped frosting and fresh berries.
Ingredients:
  • 2 1/2 cups Gold Medal™ all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 3/4 cup butter or margarine, softened
  • 1 1/2 cups sugar
  • 1 teaspoon vanilla
  • 3 eggs
  • 1 cup milk
  • 1 box (4-serving size) Jell-O™ strawberry-flavored gelatin
  • 1 cup boiling water
  • 1 tub (12 oz) Betty Crocker™ Whipped Vanilla Frosting
  • 1 teaspoon grated lemon peel
  • 4 cups mixed fresh berries
  • Fresh mint sprigs, if desired
Instructions:
  • Preheat oven to 350°F and generously grease and lightly flour a 13x9-inch pan with shortening.
  • In a medium bowl, combine flour, baking powder, and salt; set aside. In a large bowl, cream together butter, sugar, and vanilla using an electric mixer until fluffy, about 3 minutes. Add eggs one by one, mixing well after each addition. Gradually mix in the flour mixture, about 1/2 cup at a time, and milk, about 1/3 cup at a time, until fully combined. Pour the batter into the pan.
  • Bake for 35 to 40 minutes, or until a toothpick inserted in the center comes out clean. Allow to cool for 20 minutes.
  • In a small bowl, whisk gelatin into boiling water for 2 minutes until completely dissolved. Poke warm cake all over with a meat fork or table knife. Pour strawberry mixture over cake slowly, ensuring it fills the holes. Let cool in the pan on a rack for about 1 hour.
  • Combine the frosting and lemon peel in a small bowl, then spread the mixture over the cake. Top with fresh berries and mint for an elegant finishing touch.
