Spicy-sweet sriracha-lime ice cream for a creamy, flavorful treat.
Ingredients:
  • 2 cups heavy whipping cream
  • 1 cup milk
  • 0.75 cup white sugar, divided
  • 1 tablespoon sriracha sauce
  • 1 pinch salt
  • 5 egg yolks
  • 1 teaspoon grated lime zest
Instructions:
  • In a large saucepan over medium heat, combine cream, milk, half of the sugar, sriracha sauce, and salt. Heat until just before boiling, whisking occasionally to avoid cream separation.
  • In a separate mixing bowl, whisk together egg yolks, sugar, and lime zest. Gradually pour in the hot cream mixture in thirds, whisking continuously until fully combined.
  • Return the mixture to the saucepan and heat for 2 minutes, whisking constantly. Avoid boiling. Then, transfer to a clean lidded bowl and allow it to cool to room temperature. Refrigerate until fully chilled, for a minimum of 4 hours or preferably overnight.
  • Transfer the mixture into an ice cream maker and freeze for approximately 30 minutes following the manufacturer's guidelines. Enjoy as soft-serve right away or transfer to a freezer-safe container and freeze for a minimum of 2 hours until scoopable.
