Elevate brunch with a make-ahead strata featuring a creamy fruit-filled twist.
Ingredients:
  • 12 slices raisin-cinnamon bread
  • 1/2 cup pineapple cream cheese spread (from 8-ounce container)
  • 1/2 cup orange marmalade
  • 2 tablespoons butter or margarine, softened
  • 4 eggs
  • 1 1/2 cups milk
  • 1 teaspoon vanilla
  • 3/4 cup light corn syrup
  • 1/4 cup frozen orange juice concentrate
Instructions:
  • Prepare a 13x9x2 inch rectangular baking dish by spraying it with cooking spray. Toast 6 slices of bread, then arrange them in the baking dish. Spread cream cheese and marmalade evenly on each slice of toast. Butter the remaining bread slices and place them butter side up on top of the toast.
  • Whisk eggs, milk, and vanilla in a medium bowl until smooth. Pour mixture over bread, cover with foil, and refrigerate for at least 6 hours or overnight.
  • Preheat oven to 350°. Bake uncovered for 35 to 45 minutes until deep golden brown and slightly puffed. Slice bread and serve with Orange Syrup.
  • Combine the ingredients in a microwave-safe bowl and heat on high for around 1 minute until warmed through.
